PRODUCTION ORIENTATION
The farm is about 230 hectares in total, on which vineyards (20 Ha) alternate with woods, lawns and pastures. The fields, once used for alpine pasture, have been turned into vineyards since 2000, using the latest wine growing technologies and trying to exploit as much as possible the natural beauty of the territory. Much attention has also been paid to the selection of young vines which come from the best nurseries of Europe, aiming to produce fine wines with a well defined character. Under the vegetal layer of the ground we find another layer made of slimy-clayey sand, compact morainic rich in gravel and stone elements. There are various plots of land with different morphologic characteristics, disposition and microclimate. The landscape morphology alternates sloping areas covered in woods, to flatter surfaces, partially terraced, often supported by dry walls on the valley side. It is important to underline the particular attention given by the Borgo dei Posseri farm to the use of phytosanitary products in combination with biological treatments and the mechanical processing of the clearing of the ground at the foot of the plant (no herbicides are used).
The productive orientation is to enhance the environmental variability (morphology, exposure, disposition, origins and characteristics of the grounds) combining vine and environment in order to produce wines with a marked personality and uniqueness.
The vines grown with the espalier system and Guyot pruning fit in this frame. The selected vines are: Mueller Thurgau, Pinot Noir, Sauvignon, Chardonnay, Merlot and other varieties for experimental purposes.
In particular, the climate conditions of the site allow the white grape vines to express extremely valuable levels of finesse and persistence.
The farm has been among the first in Italy to use the glass cap for its white wines and at the end of 2009 will release its first batch of spumante TRENTODOC.


GRAPES: GEWURZTRAMINER
VINEYARD: Arliz 0,6 hectares 7000 plants per hectare. Facing south, south-west
YIELD: 4000-4500 Kg per hectare
HARVEST: end of October, by hand after careful selection
VINIFICATION: cryomaceration, soft crushing with stalk removing and fermentation of the must at controlled temperature
MATURATION: 7 months in steel tanks and bottle ageing
ALCOHOL CONTENT: 14,5 %
DESCRIPTION: rich and soft, velvety and alcoholic, slightly acidic; golden straw-yellow colour; intense, aromatic bouquet with rose, clover and jasmine scents, sweet and syrup fruit and spices hints. Full, smooth and persistent.


GRAPES: Sauvignon B.
VINEYARD: Furiel 2 hectares 7000 plants per hectare. Facing south, south-west
YIELD: 7000-8000 Kg per hectare
HARVEST: end of September, by hand after careful selection
VINIFICATION: soft crushing, fermentation at controlled temperature
MATURATION: 7 months in steel tanks and bottle ageing
ALCOHOL CONTENT: 13 %
DESCRIPTION: straw-yellow colour, pronounced, lingering bouquet, with hints of elder flower and passionfruit. Full, savoury and lingering flavour. If well stored, will mature for 2-3 years in the bottle


GRAPES: Pinot Nero
VINEYARD: Paradis 4.5 hectares 7000 plants per hectare. Facing south, south-west
YIELD: 4000-4500 Kg per hectare
HARVEST: late october, by hand after careful selection
VINIFICATION: removal of grapes from the stalks, fermentation on the skins and 2-week skin maceration
MATURATION: 18 months in oak barrels and bottle ageing
ALCOHOL CONTENT: 13 %
DESCRIPTION: ruby red colour; long, velvety and persistent bouquet, with pronounced soft fruit. Refined, elegant and well-balanced flavour, with remarkable and varietal features.


GRAPES: MÜLLER THURGAU
VINEYARD: Quaron 3 hectares 7000 plants per hectare. Facing south, south-west
YIELD: 7000-8000 Kg per hectare
HARVEST: end of September, by hand after careful selection
VINIFICATION: soft crushing, fermentation at controlled temperature
MATURATION: 7 months in steel tanks and bottle ageing
ALCOHOL CONTENT: 12,5 %
DESCRIPTION: straw-yellow colour, intense bouquet with hints of spring flowers, white peach and apple. Full, well-balanced flavour, with hints of minerals. If well stored, will mature for 2-3 years in the bottle


GRAPES: MERLOT
VINEYARD: Rocol 3 hectares 7000 plants per hectare. Facing south, south-west
YIELD: 6000-7000 Kg per hectare
HARVEST: late october, by hand after careful selection
VINIFICATION: fermentation on the skins and 2-week skin maceration
MATURATION: 18 months in oak barrels and bottle ageing
ALCOHOL CONTENT: 13,5%
DESCRIPTION: ruby red colour; long, velvety bouquet, with pronounced fruit. Full, smooth, well-balanced and lingering flavour
